Cihuatán Distillery

ARTISANAL and ADVENTUROUS

Producing rum that would become an ambassador for El Salvador is the vision that accompanied the Cihuatán distillery's founding at the start of the 2000s.  As the only distillery in the country, it oversees all the production stages for its rums right from locally sourced ingredients that express the full richness and complexity of its landscape.  This full autonomy together with the expertise and insatiable curiosity of its teams enable the distillery to offer superior quality artisanal rums, with each showing the wonder of rich Salvadorian heritage.

A unique self-sufficient place

Situated in the valley of the same name, the Cihuatán distillery puts all the required stages for the production of its rums together in a unique place. Teams check the quality of their products from the cane sugar harvest right up to bottling, also taking care of distillation and ageing.  The originality of this artisanal distillery lies in its self-sufficiency that goes beyond the sugar and molasses that it produces, with the distillery generating its own electricity from bagasse, the fibre residue left over from cane sugar.

Curiosity that knows no bounds

The Cihuatán distillery is today made up of around fifteen passionate staff, all inspired by the same wish: to produce the best rum in the world as an ambassador for El Salvador. Full of curiosity and boldness, the Cihuatán team never stop innovating and experimenting via new distillation, assembly or ageing techniques. This never-ending quest for innovation associated with the distillery's expertise lets it offer artisanal rums with unique aromatic profiles, each retelling its own history of Salvadorian and Mayan heritage.

Gabriela Ayala

Master Blender

As a chemical engineer by trade, Gabriela Ayala had been working in the sugar industry for several years before joining Cihuatán. Led by her curiosity and creativity, she is constantly on the lookout for new techniques and expertise to create unique rums that bear the image of her country.
