Port is a Portuguese wine made in the upper Douro Valley of Portugal. During fermentation, a grape spirit containing 77% alcohol is added to cease the activity of the yeast and interrupt the fermentation. Known as "mutage," this process became part of the wine's official recipe in 1850.
