West Cork Distillers opened in 2008 in the fishing village of Union Hall in the western part of County Cork. The distillery strenuously selects all its ingredients and closely monitors its entire production process. West Cork Distillers is the only distillery to malt its own barley. It also extracts its water from the most pristine of springs, which it believes makes for a much sweeter whiskey. Unlike most other distilleries, West Cork Distillers has chosen to refrain from chill-filtering its products to conserve the purity of its precious spirits. Today, it is one of only two financially independent distilleries in Ireland.
In 2013, the distillery moved into larger facilities in Skibbereen. The esteemed Master Distiller Frank McHardy joined the distillery in 2015. He has since passed on the know-how he acquired at distilleries such as Springbank and Bushmills to the artisans at West Cork Distillers. Frank McHardy is one of the most distinguished master distillers in the world. He was awarded the prestigious "Icons of Whisky" award by Whisky Magazine. Since his arrival at West Cork Distillers, the number of spirits in the distillery's flagship collection has more than tripled...and rumor has it he has no intention of stopping there.
